2 free-range or organic eggs
Unsweetened soy rice or oat milk
1 tablespoon curry powder
Pepper and salt
1 tablespoon apple cider vinegar
Avoid frying eggs at high temperatures, as their cholesterol turns to unhealthy oxidized “oxy-cholesterol.”
Hard-boiled or soft-boiled eggs are also healthy.
**Curried Eggs: **: Boil 4 eggs for 10 minutes, mash with 2 tablespoons unsweetened soy, rice or oat milk and 1 tablespoon curry powder, pepper and salt and mix well.
**Perfect Poached Eggs: **: Fill a pan with water, add 1 tablespoon apple cider vinegar and bring to a boil.
Add eggs and reduce heat to cook to desired consistency.
Make sure there is enough water to cover the eggs.
**Hard-boiled or soft-boiled: **: Boil eggs 5-8 mins.
